This weeks recipe is something that I threw together recently. I've been in such a slump when it comes to lunch and I can't seem to get out of it. I am trying new lunch recipes and seeing what I can come up with to get lunch a little less boring :) This recipe is somewhat helpful to the problem and super easy (and cheap) to make!
I added a spinach salad with a peach on the side. I've been enjoying a nice side salad with most of my meals and I'm really loving it!

1/4C Shredded Cheddar Cheese
1 Large Whole Wheat Tortilla
2 oz. Boars Head Sliced Turkey Breast
1/2C of spinach
1tsp. Kerrygold Butter
- Spread butter on tortilla while pan heats up
- Put tortilla in a pan, spread cheese and let melt partially.
- Next, spread spinach over cheese and let wilt while cheese finishes melting.
- Finally, put sandwich meat in and fold tortilla, let crisp on either side.
- Cut and serve!
