Lunch Quesadilla

This weeks recipe is something that I threw together recently. I've been in such a slump when it comes to lunch and I can't seem to get out of it. I am trying new lunch recipes and seeing what I can come up with to get lunch a little less boring :)  This recipe is somewhat helpful to the problem and super easy (and cheap) to make! 

I added a spinach salad with a peach on the side. I've been enjoying a nice side salad with most of my meals and I'm really loving it!

Lunch Quesadilla

Nutrition - Calories: 303, Fat: 13.6g, Carbohydrates: 24.5, Protein: 23.4

Ingredients: 

1/4C Shredded Cheddar Cheese 

1 Large Whole Wheat Tortilla 

2 oz. Boars Head Sliced Turkey Breast 

1/2C of spinach

1tsp. Kerrygold Butter 

Directions: 

  1. Spread butter on tortilla while pan heats up
  2. Put tortilla in a pan, spread cheese and let melt partially.
  3. Next, spread spinach over cheese and let wilt while cheese finishes melting. 
  4. Finally, put sandwich meat in and fold tortilla, let crisp on either side.
  5. Cut and serve!
