Loaded Goat Cheese Quiche

It has definitely been a week for the books over here for me. Between it being the week before VBS at work and the fact that I've had some sort of weird stomach thing going on plus it then affecting my RA (rheumatoid arthritis), saying I am tired is an understatement. So while I'm over here eating the BRAT diet {Bananas, rice, apples and toast (Gluten free for me!)} + some GF pasta I'm only wishing I could be eating this right now. I'm on the mend and here's to hoping this time next week I'll be eating my normal things and being able to post daily again! :)

As you all know, breakfast might as well be one of my love languages! I could eat it morning, noon and night, no matter what it is! However, once in a blue moon, eggs get boring... Goat cheese is one of my favorite ways to spice up eggs! I always add a lot of veggies into my eggs but it usually looks nasty but it tastes awesome! 

I was feeling fancy this morning and made this on a whim, decided I might as well take a picture of it because it looked delicious and then I tasted it and decided I HAD to share this recipe with you! 

This recipe is actually a portion for 2, it seems like a lot but it isn't thick, it is very thin and just makes enough for a big breakfast for two :) You can also easily make this paleo by leaving out the goat cheese, or if you are like me and can tolerate dairy most of the time (and not during a flare) goat cheese is a great option!

Loaded Goat Cheese Quiche

Ingredients

2 TBSP Ghee 

2 Red Potatoes, diced

1 C Spinach, chopped

1/2 Red Bell Pepper, diced

1/4 Large Red Onion, diced

1/2 C Cherry Tomatoes

6 eggs

1/4 C Goat Cheese 

Directions

  1. Preheat oven to 350 degrees
  2. Cut potatoes into thin diced pieces, the smaller you make them the quicker they will cook
  3. Place a pan on medium-high heat and add in 1 TBSP of ghee
  4. Once pan is heated, add potatoes and cover, stirring occasionally so they do not burn. 
  5. While potatoes cook dice peppers, onions, chop spinach, and halve cherry tomatoes
  6. Add peppers and onions to the mostly cooked potatoes, set tomatoes aside. 
  7. Once peppers and onions are softened, add spinach and wilt, season with salt and pepper.
  8. While spinach wilts scramble six eggs
  9. Turn stove on medium heat and pour eggs over vegetables
  10. Let sit until edges harden, add halved tomatoes and goat cheese, then transfer to the oven. 
  11. Cook in oven about 10-15 minutes or until center settles.
