Gluten Free Chocolate Chip Banana Bread

Happy Friday!! 

When this post comes out we will be in Charleston to visit my fiancés parents before heading to Columbia, SC for a wedding this afternoon! Which is a great little mini-vacation since we have officially ended the semester and I am starting my time off now! This semester has been stressful and seemed like it took forever... planning a wedding and taking classes is a little too stressful for me, lol. So, I’m going to soak up this break for as long as I get it! 

Onto today’s recipe… This Banana Bread is a family favorite of ours and my sister is gluten free so it’s hard because we love the old banana bread we used to eat but it has to be gluten free now! So, I decided to come up with my own and try to get as close as we can get plus add a little chocolate because, why not? ;)

Gluten Free Chocolate Chip Banana Bread

Ingredients

2 tbsp coconut oil 

3 over ripe bananas 

¾ c almond flour 

¼ c coconut flour 

Pinch of salt 

3 tbsp honey 

½ c almond milk 

4 eggs 

1 tsp baking soda 

½ tsp vanilla 

½ tsp apple cider vinegar 

1/2 c dairy free chocolate chips (I use the enjoy life brand, but you could really use any that you want!)  

Directions: 

1. Preheat oven to 350 degrees 

2. Grease a bread pan with coconut oil 

3. Add all dry ingredients together and mix well

4. In a separate bowl add all wet ingredients together 

5. Slowly add the dry to the wet ingredients stir till fully combined   

6. Once combined, add in chocolate chips (only a few because they will melt inside which is GREAT, but also messy, lol) 

7. Add ingredients to bread pan and sprinkle chocolate chips on top 

8. Put in the oven for 40-45 minutes, check periodically and once the middle is set and you can stick a toothpick in it and it comes out clean remove and let cool.
